Provence has many faces .....

It's the ski-slopes of the Hautes Alpes (barely one hour's drive from Nice), and the dazzling, celebrity-dotted beaches of the Cote d'Azur ....

It's the little sleepy villages of the Var, the Vaucluse and the Bouches-du-Rhone, and the sophisticated cultural centers of Marseille, Avignon and Aix ....

It's the lush orchards and vineyards of the Rhone Valley, and the rugged garrigue of the hinterland, redolent with the scent of wild thyme, rosemary and summer savory ....

It's tiny village bistros with only half a dozen tables and even fewer dishes on the menu, and world-renowned temples of haute cuisine boasting one, two or three Michelin stars ....

Provence is all of these things. And much, much more ....

This web site is dedicated to just one aspect of Provence: its gastronomy!

So let's start with a bold statement:                                           

The cooking of Provence is the lightest, tastiest, most colorful, most elegant and, above all, healthiest cooking in the world.

You don't agree?

Well, just think about it for a moment:

No butter ...no cream ...no flour ... no heavy sauces ... no animal fats ... very few dairy products ... very little red meat ....

And lots and lots of fresh vegetables ...fresh fruit ... fresh herbs ... fresh fish and seafood ... lean cuts of poultry and game ....light reductions of wine and stock ... all marinaded in, cooked in, dressed in and flavored with extra-virgin olive oil!

You can certainly lose weight - and stay slim - with the light and healthy cuisine of Provence.

And - more importantly perhaps - it tastes great too!
